Banana Toast with Blueberries, Granola, and Honey

Listen. I love a fried egg as much as the next girl. But every so often, I crave something on the sweeter side for breakfast. For mornings like those, this banana toast with blueberries, granola, and a drizzle of honey hits the spot. It comes together in under five minutes, keeps me full all morning long, and is about as Instagrammable as breakfasts come.

Other Banana Toast Toppings to Consider

This recipe makes my personal favorite version of banana toast. But you can mix things up and create your own rendition to suit your personal tastes. Here’s some inspiration:

  • Peanut Butter – Swap out the butter for your favorite peanut butter for a sweeter take on this breakfast toast. It’s a huge hit with the kiddos. And my boyfriend, Charlie, too.
  • Cinnamon – Dust the top with a bit of cinnamon for a bit of fall flair.
  • Walnuts – Like a bit of added crunch? Throw on some toasted walnuts or slivered almonds.
  • Coconut – Garnish your toast with toasted coconut chips for those island vacation vibes.
  • Maple Syrup – Don’t have honey on hand? Use your favorite maple syrup instead.

Banana Toast with Blueberries, Granola, and Honey

Servings 2 people

INGREDIENTS

  • 2 slices crusty sourdough or multigrain bread
  • salted butter
  • 1 ripe banana sliced at an angle
  • 1/4 cup fresh blueberries
  • 1 small handfull granola
  • honey to taste
  • 1 pinch kosher salt

INSTRUCTIONS

  • Toast and butter your bread.
  • Top with sliced banana and fresh blueberries.
  • Sprinkle with granola and drizzle with honey.
  • If desired, sprinkle with a small pinch of kosher salt. Enjoy!
