Simply Delicious Cranberry and Pistachio Chicken Salad

Ingredients

  • 4 cups rotisserie chicken torn into bite sized pieces (about 20 ounces)
  • 2/3 cup celery diced (about 3 stalks)
  • 1/4 cup green onion green parts only, finely chopped
  • 1 cup seedless red grapes halved
  • 1/2 cup dried cranberries
  • 1/2 cup roasted and salted pistachios
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon kosher salt

Instructions

  • In a large bowl, combine the chicken, celery, green onion, grapes, cranberries and pistachios.
  • In a separate bowl, stir together mayonnaise, apple cider vinegar, honey, poppy seeds, and kosher salt.
  • Pour dressing over salad and toss to combine. Chill until ready to serve.
